Now that the kids are grown and don't live with us here at the farm, sometimes an apple pie is just too much for Steve and I to enjoy by ourselves. I love making these individual puff pastry apple tarts for us instead.
Recipe:
Heat oven to 400
Cut thawed puff pastry into 4 squares and place on a greased baking sheet
Peel the apples; core and cut into wedges. Slice the wedges thinly and arrange the slices over each square of puff pastry ( I used 2 small Pink Lady apples).
Cut 3 T cold butter into small pieces and scatter them over the apples
Bake 25-30 minutes until apples are tender and pastry is golden brown
Serve with scoop of vanilla ice cream and a drizzle of caramel
